Step-by-step instructions
Soak dried chickpeas in water for at least 8–12 hours. Drain well.
In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, and spices.
Blend until finely ground but not smooth.
Add baking powder and mix briefly.
Form small balls or patties.
Heat oil to medium-high and fry falafel until golden and crispy.
Drain on paper towels and serve hot.
