This traditional Lebanese Tabbouleh Salad recipe is a healthy vegan Mediterranean appetizer made with bulgur, parsley, mint and vegetables.

In a saucepan, combine water and sugar and bring to a boil.

Add semolina and stir continuously until thickened.

Add mozzarella and keep stirring until the dough becomes smooth and stretchy.

Add rose or orange blossom water, then remove from heat.

While warm, spread dough thinly between two sheets of parchment paper.

Cut into strips and add a line of ashta along one edge.

Roll gently to form logs.

Cut into pieces, drizzle with sugar syrup, and garnish with pistachios.
