Directions
Step-by-step instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion and sauté until soft and translucent (about 5 minutes).
Stir in garlic, cumin, turmeric, and black pepper. Cook for 30 seconds until fragrant.
Add diced carrot, potato, tomato paste, and rinsed lentils. Stir well.
Pour in water or vegetable broth and bring to a boil.
Reduce heat, cover, and simmer for 30–35 minutes until lentils are fully cooked and soft.
Use a hand blender to blend until smooth, or leave slightly chunky if preferred.
Season with salt and adjust consistency with water if needed.
Serve hot with a squeeze of fresh lemon juice.
